Method of preparing Baingan Bhajia in easy steps:

Ingredients for Baingan Bhajia

  • Chana Dal Besan or Gram Flour 1 3/4 cups
  • Oil for deep frying
  • Asafoetida (Hing) 1 Pinch
  • Chili Powder 1 tablespoon
  • Kadai
  • Spoon
  • Gas
  • Baking Soda 1 Pinch
  • 9-10 Small baingan or brinjal or vanga
  • Jeera Powder 3/4 tbsp
  • Dhania Powder 3/4 tbsp
  • Turmeric Powder 1/2 tbsp
  • Salt as per taste
  • Tomato Sauce
  • Bowl
  • Water as per requirement

Preparation of Baingan Bhajia

  • Cut baingan or brinjal or vanga into slices.
  • Cut Green Chillies in to small pieces.
  • Chop coriander leaves.
  • In a bowl make batter with the Chana dal besan and add water to it as per requirement.
  • In the batter add asafoetida 1 pinch, chilli powder 1 tbsp, baking soda 1 pinch, jeera powder 3/4 tbsp, dhania powder 3/4 tbsp, tumeric powder 1/2 tbsp, chopped coriander leaves and also add salt as per taste. Mix it properly so that each item will get in to one taste of batter.

Cooking of Baingan Bhajia


  • Keep kadai on the gas with oil as per requirement, initially on full flame and as oil heats slow down to gas flame in medium.
  • Now in the prepared batter dip the sliced baingan evenly. 
  • Place the battered dip baingan on the heated oil in the kadai.
  • After one part turns to light brown turn it to other side for cooking from other side also.
  • After frying the bhajia, from both sides, take them out, drain them for excess oil and initially put the bhajis on tissue paper so that still remained excess oil will be drained out.
  • Meanwhile during preparation batter gets thick add water as per requirement.
  • BAINGAN BHAJIA IS READY
